Baked goods that are good for you?  Yes!! This week’s recipes are three delicious go to options that make for a great breakfast or snack. Turn a boring breakfast into something tasty, healthy and fun with the protein pancake recipe. The Clean Blueberry Protein Muffin recipe can be made with any fruit you like. The Dark Chocolate Protein Brownie recipe can be made in a pan or into muffins to enjoy delicious chocolate baked goods that fit with your health goals. These recipes are too good not to try!  Enjoy

Clean Blueberry Protein Muffins

Yield: 12 muffins

Ingredients

-2 1/2 cups protein powder

-1 1/2 cups eggs whites

-3 Tbsp almond flour

-2 Tbsp ground flaxseed

-3 Tbsp unsweetened almond milk

-2 Tbsp water

-1 mashed banana

-1/4 cup organic (no sugar added) applesauce

-2 Tbsp coconut oil (melted)1 tsp. vanilla extract

-1 1/2 Tbsp cinnamon

-3 tsp. baking powder

-Pinch of sea salt

-1/2 cup blueberries (or your favorite well-chopped fruit)

 

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mash banana with almond milk until smooth. Add in the rest of

the ingredients up to

the blueberries and mix well. Gently fold in your blueberries.

  1. Spoon mixture into a muffin tin sprayed with coconut oil and fill close to the

top. Bake for 15 to 20 minutes or until a toothpick inserted comes out clean.

Sprinkle powdered stevia on top and enjoy!

Dark Chocolate Protein Brownies

Ingredients:

-2 ½ c. protein powder

-¼ c carob or cocoa powder

-¼ c coconut or almond flour

-½ Tsp baking powder

-1 mashed banana

½ c almond or coconut milk  

-2 large eggs

-carob chips

-½-1 mashed avocado (for extra fudgy-Kay addition)

 

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together and pour into muffin tins (or we use 8×8 in pan)
  3. Bake 30 min or till knife comes out clean

Challenge of the Week:  Veggie change up! Whether you struggle to eat vegetables to could eat them all day, this week pick up a different vegetable than you normally eat. Select one you can eat raw or look online for suggested way to good the vegetable (roast, grill, etc) and give it a try!  You will get a dose of different vitamins and minerals flavors!
