Does a warm, fudgy chocolate brownie sound like a great snack?  While it may satisfy your sweet tooth, traditional brownies contain lots of simple carbohydrates/sugars, spiking your blood sugar and leaving you feel hungry and lethargic.  However, with the right ingredients, you can “have your cake and eat it too!” with this week’s delicious recipe, dark chocolate protein brownies!  A serving provides a delicious snack with protein, fiber, unrefined carbs, and good fats from the flour, milk, and egg yolks…a powerhouse snack!  Enjoy!

 

Dark Chocolate Protein Brownies

 

Ingredients:

-2 ½ c. protein powder (vanilla or chocolate)

¼ c carob or cocoa powder

¼ c coconut or almond flour

½ Tsp baking powder

1 mashed banana

½ c almond or coconut milk  

2 large eggs

½-1 mashed avocado (for extra fudgy)

Topping (optional)

Chopped nuts, mini chocolate or carob chips for sprinkling

 

Directions:

  1. Preheat oven to 350 deg
  2. Mix all ingredients together and pour into muffin tins 8×8 in pan, add topping if desired
  3. Bake 30 min or till knife comes out clean.  Serves 10-12

Note: Try adding peppermint extract, instant coffee, hazelnut extract or other flavorings
